The first university in Oklahoma to join the farm to school program and is being very progressive in their commitment to incorporate not only local produce but local product into most aspects of the multiple food service options that they provide on campus. They purchase through the statewide program as well as directly from the local producers. Fun activities included hosting Chef Harry, spokesperson for the National Watermelon Promotion Board in the main cafeteria where students were able to sample watermelon lemonade, watermelon salsa and watermelon with mozzarella cheese sandwiches and then create their own designer watermelon fruit smoothie. Special guests included the Oklahoma Lt. Governor Jari Askins and OU Government Relations and past Oklahoma legislator Russ Hilliard.
On September 11, 2008 during Green Week, the University of Oklahoma Food Services and Farm to School held a mini farmers market sampling and selling local produce and products, did cooking demos of local produce and served a local meal at Couch cafeteria promoting local producers.

OU also unveiled their new healthy fast food restaurant located in the Student Union called the ‘Laughing Tomato’. The restaurant is a big success and they are serving as much local produce and product as possible and also promoting their values through their signage.
